PROCESS

As the fishing vessels moor close to our facilities, each load of herring arrives fresh from the sea.

After checking temperature, quality, size and fat content we determine how to best use the herring from each catch. Then the fish is pumped into our processing plant for sorting according to size. They are filleted, skinned, seasoned or pickled, and finally filled into barrels. An automated process ensures consistent quality, but throughout the production, we conduct manual checks in order to document the characteristics of each specific fillet. Finally, we store the barrels in a carefully controlled climate for ripening.

Naturally, our facilities hold the required certificates ensuring optimum product quality as well as the highest hygiene and safety standards through the entire process. Furthermore, our production has documented traceability, allowing us to follow the herring fillets to the specific vessel and to the exact time and place they were caught.
